Green Bean and Fried Onion Casserole for Christmas? Not so much…

Dear Nell,

Any suggestions for a PALEO version of a tradition in my family- the notorious Green Bean Casserole on the Christmas Dinner Table?

Thanks,

Betsy in Indianapolis

I've heard of this, but I had to know more.  I did a google search to find out what actually goes into this dish that is a staple in some homes for their Holiday Feast.  Here it is, and it's not good:

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Freeor Healthy Request®)

1/2 cup milk

1 teaspoon soy sauce

Dash ground black pepper

4 cups cooked cut green beans

1 1/3 cups French's® French Fried Onions

Wow.  The only thing in the entire recipe that's Paleo is the dash of ground pepper!

OK- complete overhaul.  Rather than make it over, I'd suggest first picking a different veggie- perhaps sprouts are a good option as for many people, they are already associated with the holiday table.   Next, focus on flavors: garlic, olive oil, shallots, mushrooms, perhaps a bit of homemade chicken stock or a splash of wine…present this to your guests & family in place of the green bean casserole and you'll save them the hassle of upset stomachs (thanks to the soy & fried onions)  and a congested head (courtesy of the 'cream of' soup & milk!
