Is It True That Eggplants Don’t Have Any Nutritional Value?

Not at all!

Eggplants are high in phytonutrients, many which have antioxidant properties.  These helps us keep our cardiovascular system healthy and protect against free radial damage.  In addition, eggplant is a source of dietary fiber, potassium, manganese, copper and thiamin (vitamin B1), vitamin B6, folate, magnesium and niacin.

Enjoy it in a stir fry, a puree, or cooked on the grill with olive oil and basil!  Delish!

One caveat to keep in mind is that this is a member o the nighshade family, making it off limits if you follow the Auto Immune version of The Paleo Diet.
