Paleo Blackened Salmon

What a delicious meal I just prepared, and in about fifteen minutes!

Having just arrived back home from Hawaii, I stopped by Whole Foods to pick up a few bits to tide me over until I do my regular shop tomorrow.

I grabbed some swiss chard, an heirloom tomato, an avocado and some gorgeous wild Alaskan King Salmon.

Once home, I quickly deboned the salmon, sprinkled a salt-free cajun spice blend (paprika, ground celery seed, garlic powder, onion powder, cumin, black pepper, hot pepper, curry powder, turmeric, dill, mace and cardamom) top, followed by some olive oil and then baked it for about twelve minutes, then finished it off with a three minute broil.

Meanwhile, I washed, chopped and steamed the chard, sliced the tomato and halved the avocado.

THAT was a nice dinner… and the rest will be a nice breakfast tomorrow, since I don't have a workout scheduled until mid day!
