Paleo Prawn Starter For Christmas Day

While unfamiliar to me at first, starting the dinner with a first course of 'prawns' is a mainstay in my husband's family in England, including on Christmas Day.

Keep in mind, when he says 'prawn' it's what I'd call 'shrimp'.  Important to clarify as I once forgot to do so when planning a meal for a client, to which she replied, "I'm not eating crayfish!"

OK, enough said!

Here's an easy-peasy recipe that you can serve in two shakes of a lamb's tail!

 

1 pound  jumbo shrimp, cooked, peeled & chopped

1 large avocado, peeled, pitted & chopped

1 large tomato, chopped

1 tablespoon fresh lemon juice

4 leaves  Bibb Lettuce 

1 tablespoon parsley, chopped, for garnish

Combine first four ingredients (leave out the tomatoes if you follow the Auto Immune Plan).  Spoon into lettuce leaves and scatter the parsley on top. Add some freshly ground black or cayenne (if you want some heat!) pepper if you like…

Serve on Christmas-y themed plates & enjoy!
