I'm getting bored of lemon and olive oil on my salad and really miss the raspberry vinaigrette I used to use. Any suggestions?
Try a puree in a small food processor (I LOVE my Cuisinart Mini Prep ) of fresh (or frozen) raspberries, olive oil, a few fresh mint leaves and a splash of lime. Whiz til smooth and finish it off with a dash of white pepper.
I'd suggest having it on a nice, light salad of butter lettuce and chopped, raw walnuts.
