Signature Raw Paleo Truffles Revisited for Valentine’s

I don’t typically do a re-post of something I’ve written about before, but there are certain things that are worth the exception; like my recipe for decadent Paleo truffles.

I feel in two minds about posting Paleo dessert recipes because many people still view dessert in the wrong light, as in something you eat often (even every day!) and that’s part of normal, day to day Paleo fare.

Not true.  I see dessert as something to enjoy perhaps once per month, if that.  Otherwise, it’s all about the veg, protein and great fats!

Even though my recipe is made with Paleo ingredients, along the same rationale that paleolithic man probably did indulge in honey, once in a while, the idea is to have a special treat in modern day, again, only once in a while.

Like at Christmas (when I originally posted this) and perhaps at Valentine’s.

Raw Paleo Truffles

 ½ cup raw cacao nibs, ground, plus a little extra for dusting

¼ cup coconut oil

¼ cup coconut butter

¼ cup creamy roasted almond butter

¼ cup honey

 

-Combine cacao, coconut oil, coconut butter, almond butter & honey.

-Stir ingredients until well combined

-Place bowl in freezer for 10′

-Roll into 1 inch balls

-Roll in the extra ground nibs

-Place in tiny foil candy cups and then into a box for presentation
