Simple Stir Fry

It doesn't get easier than chopping up any and all of your favorite veggies and proteins and giving them a quick stir fry in the skillet! Make extra for lunch tomorrow, whether you're eating it at home or sending it with the kids to school!
Ingredients
  • 2 tablespoons rendered duck fat
  • 1 cup chopped white mushrooms
  • 1 medium yellow onion, chopped
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 pounds pasture raised chicken thighs (save skin and bones for stock), chopped
  • 1 large carrot, grated
  • 2 scallions, chopped
Instructions
  1. Heat oil in skillet over medium high
  2. Add mushrooms and onion and brown, stirring for 5 minutes
  3. Add broccoli and red pepper and cook 5 minutes longer
  4. Add garlic and cook 30 seconds
  5. Remove veggies from skillet and set on platter covered in foil
  6. Add chicken and cook 4 - 5 minutes until internal temperature reaches 160
  7. Arrange chicken on top of platter and scatter carrot and scallions on top
