Grinding your own meat is not only easy, it’s fun! All you need is the grinder attachment to the kitchen aid mixer you used to use for baking and you’re ready to create the best burgers ever!
Ingredients
  • 2 pounds grass fed chuck roast
  • 1 pound grass fed bone-in short ribs
  • 1 small head Bibb or Butter lettuce, leaves separated
  • 1 ripe avocado, sliced
  • 1 ripe Beefsteak or Heirloom Tomato, sliced
  • 1 small red onion, thinly sliced
Instructions
  1. Preheat grill
  2. Cut chuck into 1” square pieces
  3. Remove bone from short ribs (save in freezer for making stock) and cut meat into 1” square pieces
  4. Using meat grinder attachment, push meat through into bowl
  5. Shape into 4 – 6 patties
  6. Place on grill
  7. Cook 2 minutes per side then flip and cook 2 minutes longer for medium rare
  8. Check internal temperature has reached 115°F*
  9. Remove from grill, place on platter and tent with foil
  10. Let sit 10 minutes
  11. Arrange lettuce on another platter and add one burger to each, followed by avocado, tomato and onion
  12. Get out the napkins, because it’s going to be messy; enjoy!
  13. *Temperature will continue to increase roughly ten degrees while resting so be sure to factor this in to cook time and grill to your preferred level of doneness
