Cream of Coconut…Perfect for Christmas Prep!

No, I'm not talking about that horrid 'canned cream of coconut' that you'll find in the booze section of the market.  A quick check of the label reveals: COCONUT MILK, SUGAR, WATER, POLYSORBATE 60, SORBITAN MONOSTEARATE, SALT, PROPYLENE GLYCOL ALGINATE, MONO AND DIGLYCERIDES (EMULSIFIERS), CITRIC ACID, GUAR GUM, LOCUST BEAN GUM.

Hmmm… not so Paleo!  Can you even identify some of those items as food?

While fresh is obviously always the way to go, I recently learned of a brand called Let's Do Organic that sells coconut cream in a tetra pack that contains:  coconut.  AND, it's organic!  How awesome is that?  You can purchase it online and use it as is, or add water to dilute it a bit.

So what on earth has this got to do with the holidays?  Well, coconut cream and milk come in really handy all year round, including now, during the Holidays. I use it to make Paleo Egg Nog for Christmas Day, to offer guests as something to pour into their tea or coffee for those who don't prefer their hot beverages 'as is', to make Paleo Hot Cocoa and to serve along some of my Paleo holiday desserts.
