Whole Roasted Cauliflower

- 1 whole head organic cauliflower
- ½ cup rendered duck fat
- ½ small lemon, juiced, plus ½ teaspoon zest
- ¼ teaspoon black pepper
- 1 cup minced parsley
- Preheat oven to 450°F
- Remove leaves and core cauliflower, leaving head intact, then discard core and put cauliflower head in pan.
- Rub fat all over top of cauliflower
- Bake until tender in cast iron skillet roughly an hour;checking occasionally to ensure even cooking
- Whisk together lemon juice and pepper
- Remove from oven and place on serving dish
- Scatter parsley on top
