Based on one of my recipes in Paleoista! Often, people new to Paleo find breakfast the most difficult meal to adapt to. Here's a breakfast you may already have been eating without realizing it was Paleo!
Ingredients
2 tablespoons extra virgin olive oil
1 large shallot, peeled and minced
1 large red bell pepper, diced & seeded
4 large free range eggs
4 cups loosely packed spinach
1 avocado, sliced
2 cups fresh organic blueberries
Instructions
Heat oil in cast iron skillet over medium
Add shallot and cook one minute
Add pepper and cook three minutes, stirring
Add eggs and cook over easy or scramble
Turn off heat, add spinach and cover
Let sit two to three minutes
Place on two serving plates, spinach first, with avocado on top and berries on the side
