Paleo Chicken Larb

Paleo goes Thai with this easy chicken recipe. Using Butter Lettuce as a vehicle for this savory, light preparation, you're not going to miss the rice!
Ingredients
  • 1 pound free range chicken breast
  • 2 tablespoons coconut oil
  • 2 shallots, minced
  • 4 cloves garlic, minced
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • 1 small lime, juiced
  • ½ cup homemade chicken broth
  • Chili pepper flakes, to taste
  • 4 Butter Lettuce leaves
Instructions
  1. Cut raw chicken into small chunks
  2. Heat oil in skillet over medium high
  3. Add shallots and saute until softened, 2 -3 minutes
  4. Add garlic and cook one minute longer
  5. Add chicken and cook, stirring
  6. Meanwhile, combine mint, cilantro and lime in mini prep food processor and whiz to puree
  7. Add to chicken in skillet
  8. Add lime juice and broth
  9. Continue cooking until temp = 160.
  10. Add pepper, to taste
  11. Serve in lettuce 'wraps' with your favorite veggies
