Seared Ahi on Summer Veg

Skip the bed of rice in favor of a bed of veggies. Let the seared Ahi take the center stage it deserves with its fresh flavor and meaty texture.
Ingredients
  • 1 pound wild ahi, sashimi grade
  • Salt free Cajun blackening spice, to taste
  • 2 tablespoons coconut oil
  • 1 large yellow squash, cut into circled slices
  • 1 bunch rapini, chopped
  • ½ cup melon (cantaloupe or honeydew) made into ball shapes
  • 1 radish, sliced thin
  • Freshly ground black pepper, to taste
Instructions
  1. Pat fish dry with paper towels
  2. Season with blackening spice
  3. Heat oil in cast iron skillet over medium
  4. Add squash and rapini and saute five to eight minutes until soft
  5. Remove from skillet and place on two plates
  6. Add ahi and sear briefly on each side, depending on how rare you want it
  7. Place half the ahi on each plate
  8. Garnish with melon and radish
  9. Sprinkle with pepper, to taste
