Ingredients
12 ounces cooked chicken meat
4 cups arugula or other lettuce, washed and spun dry
2 cups blueberries
1 small, ripe avocado
1 small lemon, quartered
1 teaspoon sunflower seeds or slivered almonds, optional
Instructions
Shred or dice chicken
Divide lettuce into two portions and place in two bowls
Top with half the chicken, berries and avocado
Squeeze lemon on top
Scatter seeds or nuts, if using
Toss to combine
