The simplest way to prep the starch of choice for Paleo endurance athletes warrants a moist, sweet tuber which is perfect for fueling the long haul!
Ingredients
  • 2 large yams
  • Sea salt, to taste
Instructions
  1. Wash yams
  2. Place in glass or ceramic baking dish with 2" water
  3. Preheat oven to 450F
  4. Bake sixty - ninety minutes, until easily pierced with fork
  5. Remove from oven and let cool
  6. Using your fingers, gently remove and discard skin
  7. Enjoy with sea salt and get ready to move
