Julienned Vegetable Salad

- 6 large carrots, peeled
- 2 large zucchini
- 2 large yellow squash
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Freshly squeezed lemon juice, to taste
- Using the mandoline, slice carrots and all the squash into ribbons
- Divide into two bowls and refrigerate to chill
- Toss with olive oil and garlic
- Drizzle with lemon juice, to taste
- Serve with your favorite protein- wild salmon sashimi is a great choice!
