Ground almonds come in handy to take the place of white flour to 'dust' the artichoke hearts with, prior to a quick saute in olive oil. Using frozen artichoke hearts (with nothing added) is an option to save time, while staying Paleo.
Ingredients
2 tablespoons extra virgin olive oil
one pound artichoke hearts
2 tablespoons ground almonds
1 shallot, minced
freshly ground nutmeg, to taste
2 tablespoons parsley, minced
Instructions
Heat oil in skillet over medium
Toss artichoke hearts with almond flour to coat
Saute in oil for three to five minutes, stirring occasionally
Add shallot and cook one minute longer, until browned
Sprinkle with nutmeg, to taste
Top with parsley
