Ingredients
2 8 oz bone in pastured pork chops
Freshly ground pepper
½ cup fresh mint
½ cup fresh cilantro
½ cup fresh parsley
4 cloves garlic
2 tablespoons olive oil
1 tablespoon lemon juice
Instructions
Preheat oven to broil
Pat dry pork chops with paper towel and season with pepper
Combine all remaining ingredients in mini prep food processor and whiz to combine to make relish
Place chops on wire rack and cook, roughly 20 - 25 minutes, flipping at least once halfway through, until internal temp = 160F
Remove from oven, tent with foil and let rest 10 minutes
Meanwhile, steam some of your favorite green leaves
Serve chops on top of leaves with relish from on top
