Fig & Pastured Pork Loin Amuse Bouche

Missing your melon wrapped in prosciutto? No need! Thin slices of pastured pork loin you roast yourself allows you all those lovely flavors you've been missing...in Paleo Style!
Ingredients
  • 4 fresh mission figs
  • 2 ounces roast pastured pork tenderloin, sliced very thin into eight pieces
  • Freshly ground nutmeg, to taste
  • Parsley, for garnish
Instructions
  1. Wash and halve figs
  2. Layer one half of a fig, followed by one piece of pork, then another half and another piece of pork
  3. Repeat with remaining figs
  4. Sprinkle with nutmeg, to taste
  5. Garnish with parsley sprig
