Wild Opah with Pineapple Mango Salsa

When in Hawaii...eat local, just like when you're at home! A hint of heat balanced out with a hint of sweet makes this salsa the perfect accompaniment for any wild fish.
Ingredients
  • 2 pounds wild Opah fillet, skin on
  • Freshly ground black pepper
  • 2 tablespoons coconut oil
  • 1 small, ripe mango, cubed into ½" pieces
  • ½ small pineapple, cored and cut into ½" pieces
  • ½ cup freshly chopped cilantro
  • 1 small jalapeƱo, seeded and minced
  • 2 small limes, juiced
Instructions
  1. Pat Opah fillets dry with paper towel and season with pepper, to taste
  2. Heat oil in skillet over medium high
  3. Sear fish five minutes, flipping over halfway through
  4. Meanwhile, stir all remaining ingredients together in bowl
  5. Remove fish from skillet and place under foil on ceramic serving dish
  6. Let sit five minutes while you steam a batch of your favorite greens
  7. Serve fish on top of salad, passing salsa
