Holiday Sausage + Chestnut Stuffing

You've tried sausage and chestnut with the traditional bread stuffing...so why not try the same flavors without the part that actually makes you 'stuffed' (the bread!)? By adding more onions, celery and carrots, you can easily and cost-effectively whip up a batch of this traditional no-grain side dish leaving room on your plate to add even more veggies and turkey!
Ingredients
  • 1 pound fresh chestnuts, roasted
  • 1 pound humanely-sourced sausage
  • 1 tablespoon humanely sourced lard or duck fat
  • 2 medium onions, chopped
  • 8 celery stalks, chopped
  • 8 carrots, chopped
  • 4 garlic cloves, chopped
  • ½ cup dry white wine
  • ½ cup bone broth
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh rosemary plus extra sprigs for garnish
  • Freshly ground pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. Cook and crumble sausage in skillet
  3. Add wine.
  4. Scrape up any brown bits from bottom with a wooden spoon
  5. Add thyme, sage, and parsley.
  6. Add pepper.
  7. Bake in 9-by-13-inch baking dish
  8. Bake 30 minutes, stirring 2 - 3 times to ensure even cooking and browning
  9. Remove from oven and let cool before serving, garnished with rosemary
