- 1 pound 100% grass fed filet mignon
- 4 quail eggs (optional)
- Black Truffle oil
- 1 Tbsp red onion, minced
- Parsley, for garnish
- Finely mince beef with chef's knife
- Portion onto four plates
- Crack open egg on top of each portion
- Drizzle oil on top
- Scatter onion and parsley on top
