BEEF + CABBAGE STEW

An easy way to shortcut your St Patricks Day Prep; use bone broth! If you're keeping Paleo, nix the traditional white potatoes and serve with a side of cauliflower mash
Ingredients
  • 2 T duck fat
  • 3 pounds grass fed and finished beef brisket cut into cubes
  • Himalayan Salt
  • 6 carrots cut into chunks
  • 1 head green cabbage, cut into small wedges
  • 32 oz grass fed and finished beef bone broth
  • Filtered Water
Instructions
  1. Preheat oven to 300 F.
  2. Heat duck fat in Dutch Oven over medium
  3. Sprinkle salt on beef
  4. Place beef in and brown on all sides.
  5. Add carrots and cabbage.
  6. Add broth to just to cover - adding water if needed.
  7. Cover pot and bring to a boil, then reduce to a simmer.
  8. Place cover on oven and place in oven.
  9. Cook 2 - 3 hours, checking every hour to make stir.
  10. Remove from oven.
  11. Slice meat across the grain.
  12. Serve on a bed of your favorite greens.
