Roasted Sprouts with Shallots

Transform any Sprout Hater to a Sprout Lover with this crowd pleaser of a side dish. Crack a couple of eggs on top to create a perfectly balanced meal any time of day!
  • 1 pound organic sprouts, washed and halved
  • 4 large shallots, roughly chopped
  • 3 tablespoons rendered duck fat (or use coconut oil to make it vegan-friendly), melted
  • Optional- Fresh Rosemary, for garnish
  1. Preheat oven to 450, with baking dish inside
  2. Toss sprouts and fat until well combined
  3. Place cut side of spouts down on hot baking sheet
  4. Sprinkle shallots on top of sprouts
  5. Place in oven and cook roughly 12-15 minutes until shallots are crisp and sprouts are browned
  6. Remove from oven and let cool 5 minutes before serving
