Curried Tuna Salad on Cabbage

In a pinch, we can use canned tuna as long as it's rinsed thoroughly to remove sodium. Here's a crisp, refreshing option for a quickly prepared meal.
  • 1 can albacore
  • 2 tablespoon extra virgin olive oil
  • Salt free curry powder
  • ¼ head cabbage, shredded
  • 1 small lime, juiced
  • ½ apple, diced
  • 1 oz raw cashews
  • Freshly ground black pepper, to taste
  • Orange slice, for garnish
  1. Thoroughly rinse and drain tuna
  2. Combine with olive oil and curry powder in small bowl
  3. Combine lime with cabbage in medium bowl
  4. Divide cabbage into two portions and place into two bowls
  5. Top each with a scoop of half the tuna
  6. Scatter apples and cashews on top
  7. Grind pepper on top
  8. Finish with orange wedge
