Spring Fennel, Apple & Radish Citrus Salad

A crisp foray into spring; a cool balance to any spicy dish such as blackened, wild salmon.
  • 2 bulbs fennel, chopped
  • 1 large Granny Smith Apple, cored and chopped
  • 8 radishes, chopped
  • 1 clove garlic, smashed
  • Juice of ½ small Navel orange
  • 1 tablespoon pistachio oil
  • Freshly ground pepper
  • 2 tablespoons pistachios
  1. Combine first four ingredients in food processor and pulse to combine, or chop into small, uniform dice, about 1" in size
  2. Whisk together orange juice, lemon juice, pistachio oil and pepper
  3. Place vegetable mixture into large, flat bowl
  4. Pour dressing on and stir briefly to combine
  5. Scatter nuts on top
