When it comes to veg, there is simply no such thing as 'too green'. The more leaves, the better, so mix and match to make your own fave combo.
  • 2 tablespoons coconut oil
  • 1 large shallot, diced
  • 1 bunch green garlic, washed, chopped
  • 1 bunch red, curly kale, washed, shredded
  • 1 bunch rainbow chard, washed shredded
  • Freshly ground pepper, to taste
  1. Heat oil in cast iron skillet over medium-high
  2. Add shallots and saute until softened and brown, 3 -5 minutes
  3. Add garlic and cook 1 minute longer
  4. Add greens and cover skillet for 3 - 5 minutes, checking every minute to stir
  5. Turn off heat
  6. Serve with your favorite protein on top to create a balanced Paleo meal
