Leaves and berries... doesn't get more Paleo than that! Combining sweet and savory and adding on some lean protein offers an fast and easy meal that's perfectly balanced. Use whatever fruit is locally and seasonably available to you.
  • 4 cups mixed green lettuce
  • 2 leftover, cooked chicken breasts, 10 - 12 oz in total, cut into strips
  • 1 cup raw blueberries
  • 1 oz raw walnuts
  • 1 yellow bell peppers
  • ½ cup watermelon, cubed
  • 2 tablespoons extra virgin olive oil
  1. Divide lettuce into two portions and place on two plates
  2. Add half the sliced chicken to each
  3. Scatter half the berries, walnuts, pepper and melon on each
  4. Drizzle one tablespoon oil on each
  5. Can be made in advance and taken with you as a Paleo To Go meal.
