Mango & Tomato Salsa

The sweetness of mango offers a nicely balanced counterpart to the tang of the lemon and the heat of the jalapeno. Who needs chips?
  • 1 ripe medium sized mango, peeled and coarsely chopped
  • 1 ripe red Beefsteak or Heirloom Tomato, coarsely chopped
  • ½ small red onion, chopped
  • 2 cloves garlic, smashed
  • 1 small jalapeno (seeded if you prefer less heat), minced
  • juice from ½ lime
  • 2 tablespoons fresh cilantro, minced
  1. Combine all in a small bowl
  2. Alternatively, puree all ingredients if you prefer a smoother texture
  3. Cover tightly with plastic wrap and chill several hours before serving
  4. Serve with crudite as an appetizer
  5. Use the leftover portion as a marinade for chicken
