Paleoista's Grilled Pesto Lobster

Don't drown it in butter... enhance it with herbs and garlic! A simple Paleo version of an old classic to top of one of the best protein sources we can find make for a perfect pair to enjoy not only on National Lobster Day but any day!
  • 2 lobsters
  • 1 cup fresh basil leaves
  • ½ small lemon, juiced
  • 2 cloves garlic
  • 1 ounce raw sprouted walnuts
  • ½ cup olive oil
  • Freshly ground pepper, to taste
  1. Halve lobsters
  2. Combine all remaining ingredients in food processor and whiz until thoroughly combined; set aside
  3. Grill lobsters cut side down over medium high heat until shells are bright in color (~ 4 minutes)
  4. Turn over and spread pesto with a pastry brush onto the meat
  5. Grill until the lobster meat is an opaque white color (~3 minutes)
  6. Serve with your favorite mixed green salad or grilled veggies!
