Paleo Vanilla Coconut Cream

For the once in a while treat, this works perfectly in place of dairy whipped cream. Pass the strawberries!
  • 1½ cups natural unsweetened shredded coconut
  • 4 cups boiling water
  • ½ teaspoon vanilla extract
  • 2 tablespoons raw honey, warmed to pour easily
  1. Place coconut and boiling water into blender and let it sit 5 - 10 minutes
  2. Blend the mixture on high for 1 -2 minutes, then let sit 10 minutes longer
  3. Give one last whiz in the blender
  4. Place cheesecloth over a medium bowl container.
  5. Pour coconut mix over the cheesecloth or strainer
  6. When liquid is no longer coming from the strainer use the back of a spoon to press out more liquid and then use hands to squeeze out the remainder.
  7. When all liquid is drained set aside excess coconut.
  8. Cover tightly with plastic wrap and refrigerate overnight.
  9. A natural separation will have occurred which is the coconut cream that has settled at the top.
  10. Scoop off the cream and fold in the vanilla and honey
