Paleole Guacamole

Making Paleo guacamole is a cinch; skip the salt and let your taste buds experience the decadent flavor of avocado instead! Serve with your choice of fresh crudites.
  • 1 large ripe organic avocado
  • 1 small lime, juiced
  • 1 small organic ripe, red tomato
  • 1 clove (or more) garlic, minced
  • ½ small red onion, diced
  • 1 small jalapeno, seeded (or not if you want heat) minced
  • 2 tablespoons fresh cilantro, minced
  1. Halve avocado.
  2. Scoop out flesh into a small bowl, reserve pit
  3. Mash with fork
  4. Add lime juice and stir
  5. Add tomato, garlic, onion and jalapeno and stir to combine
  6. Place pit in the middle of mixture and press plastic wrap directly on top so as to prevent oxidation
  7. Chill for several hours before serving
  8. Garnish with fresh cilantro
