Light, fresh and springy, the frisee lends itself to a beautiful presentation. Add more poached wild shrimp to turn this starter into an entree!
  • 2 heads frisee, washed and cut in half
  • 1 ripe pear, thinly sliced
  • 1 small, ripe avocado, thinly sliced
  • 2 jumbo wild shrimp, poached
  • Extra virgin olive oil, to taste
  • Freshly ground black pepper, to taste
  1. Arrange frisse in two salad bowls or plates.
  2. Fan pear and avocado evenly on each plate.
  3. Add one shrimp to each.
  4. Drizzle with olive oil, to taste
  5. Finish with freshly ground black pepper
