Using a 'crust' made only of organic pistachios makes this simple prep completely Paleo.
  • 1 pound wild king salmon fillet, skin on
  • 1 tablespoon coconut oil
  • 2 tablespoons macerated pistachios
  • lemon wedges, for garnish
  1. Pre heat oven to broil
  2. Debone salmon
  3. Place oil in glass or ceramic baking dish
  4. Place salmon in dish, skin side down
  5. Press pistachios onto flesh of salmon
  6. Broil 15 - 20 minutes; check to make sure internal temp = 160 if not sashimi grade
  7. Remove from oven
  8. Serve on a bed of your favorite greens, with lemon as garnish
