Sauteed Greens, Leeks and Garlic

ANY leafy green tastes fabulous this way; vary it often to give your body a nice balance of all of them!
  • 1 bunch collard greens
  • 1 bunch Dino Kale
  • 2 tablespoons coconut oil
  • 1 leek, root and green portion removed, halved, washed and chopped
  • 4 cloves garlic (or more!) very thinly sliced
  1. Remove stems from greens
  2. Chop stems, set aside
  3. Place leaves in sink, fill with warm water and massage while tearing into bits
  4. Spin dry
  5. Heat oil in cast iron skillet over medium
  6. Add chopped leeks and stems and saute 5 - 8 minutes
  7. Add garlic and cook 1 minute longer
  8. Add shredded leaves, stir, cover and turn off heat
  9. Let sit for 3 - 5 minutes, stirring once or twice
  10. Serve with your favorite protein
