Full of flavor, as well as healthy compounds that support the immune system, adding shiitake mushrooms to any dish adds an extra bit of meatiness!
  • 4 oz dried shiitake mushrooms
  • 2 tablespoons coconut oil
  • 4 cloves garlic, smashed
  • 4-6 small bok choy, halved
  • Freshly squeezed lemon juice
  1. Place mushrooms in a cup and fill with water to rehydrate; let sit 20 minutes
  2. Heat oil in cast iron skillet over medium high
  3. Chop hydrated mushrooms and drain
  4. Add mushrooms to skillet and saute until softened; roughly five minutes
  5. Add garlic and cook one minute longer
  6. Add bok choy and cover skillet; cook two minutes, flipping halfway
  7. Turn off heat and let sit a few minutes longer
  8. Finish with a squeeze of fresh lemon juice
