Soft Boiled Eggs on Greens with Coconut

A runny, soft boiled egg is the perfect balance between raw, which has more nutrition, but also a higher risk of bacterial contamination, and hard boiled in which much of the nutrition is cooked out. Combined with veg and healthy coconut, this is a quick & delish meal or snack!
  • 4 cage free organic eggs
  • 4 cups mache lettuce
  • 2 tablespoons coconut oil
  • Freshly ground pepper, to taste
  1. Place cold eggs in pot of cold water.
  2. Bring to boil, then set timer for six minutes.
  3. Wash and spin dry mache.
  4. Divide into two bowls.
  5. When timer rings, crack open two eggs in each bowl.
  6. Add one tablespoon of coconut to each and let melt from heat of egg.
  7. Top with freshly ground pepper, to taste
