Crisp, fresh and light, this is a perfect Paleo prelude to a lovely meal.
  • 1 cucumbers, peeled and sliced
  • 1 small, ripe avocado, cubed
  • ½ bunch scallions, chopped
  • Dried oregano to taste, optional
  1. Combine first three ingredients.
  2. Chill thirty minutes.
  3. Divide in half and top with oregano if desired.
