Crisp, fresh and light, this is a perfect Paleo prelude to a lovely meal.
- 1 cucumbers, peeled and sliced
- 1 small, ripe avocado, cubed
- ½ bunch scallions, chopped
- Dried oregano to taste, optional
- Combine first three ingredients.
- Chill thirty minutes.
- Divide in half and top with oregano if desired.
