  • 2 4-6 ounce lobster tails
  • 2 tablespoons coconut oil
  • 4 cloves garlic, minced
  • 1 bunch rapini (broccoli raab), coarsely chopped
  1. Heat a pot with two inches of water until simmering
  2. Heat oil in cast iron skillet over medium high
  3. Place lobster tails in simmering water; set timer for six minutes
  4. Add garlic to oil; cook one minute, then add raab
  5. Cover skillet with raab and stir occasionally
  6. When timer rings, turn heat off both burners
  7. Divide raab in half and plate
  8. Add one lobster tail to each plate
