Vary this recipe based on where you live and what time of year it is. Using a combination of different mushrooms yields a different, but equally delicious new version each time!
  • 2 tablespoons olive oil
  • 4 ounces Shittake Mushrooms
  • 4 ounces Portabello Mushrooms
  • 4 ounces Enoki Mushrooms
  • 4 ounces Oyster Mushrooms
  • 6 cloves fresh garlic, smashed
  • 2 tablespoons minced parsley
  • Freshly ground black pepper, to taste
  1. Thoroughly wash, dry and chop all mushrooms
  2. Heat olive oil in cast iron skillet over medium
  3. Add mushrooms and saute, stirring frequently, until browned
  4. Add garlic and cook one minute longer
  5. Turn off heat
  6. Sprinkle on parsley
  7. Drizzle with pepper, to taste
  8. Serve with your choice of Paleo protein atop a bed of your favorite leafy greens
