I have deemed myself the Queen of Paleo Concoctions…some of the things I come up with creates a bit of a stir as my husband will look at what I'm about to eat or drink and comment that he cannot believe I'd eat 'this with that'! : )
Doesn't stop me though… I love sweet with savory (berries on a salad), crunch with smooth (raw walnuts mixed into a homemade smoothie) or hot with cold (sashimi with steaming hot bok choy)! As long as the macro nutrients are balanced, I'm happy!
Along the same lines, Catherine, a blog reader, emailed me about one of her favourite pumpkin concoctions that she uses as a Paleo Dessert:
"Another tasty way to do pumpkin is using pumpkin puree as a base and then adding pumpkin seeds, frozen blueberries & blackberries, frozen pomegranate seeds, 1 persimmon, roasted chestnuts, cinnamon and nutmeg, and slivered almonds or walnuts. Sometimes I may add other fruit as well like kiwi. I also freeze the persimmon and then let it thaw before adding it into the mixture. This is an amazing dessert that I eat often."
