Leeks…

"What do I do with leeks?"

Lots!

First things first, though, make sure you wash them, quite thoroughly.  They are often quite sandy and need to either be soaked, or cut in half lengthwise then rinsed in order to clean them properly.

Then:

– Bake them underneath a chicken with some similarly-sized cut carrots, doused in olive oil and rosemary.

-Steam them and eat as a side to poached fish.

-Add some water to cut leeks in a pot, with a bouquet garnis of your choosing, some leftover turkey (cubed), fresh pepper and enjoy this light soup!

-Throw some on the grill, cool, and puree with some leftover broth into a puree.
