“Leftover Stew”

Are you someone who mostly makes it a habit to cook your healthy meals & snacks to prepare for the next day,   but by the end of the week, you end up with the inevitable bunch of broccoli or half a roast chicken leftover?  

Don't waste it- make a stew!

No different than when you're cooking a meal in the first place, there's always room to be creative when combining a bunch of leftovers into a pot, letting the flavors marry and seeing what you come up with!

I recently combined a leftover chicken coconut curry (only the sauce remained, and since I didn't serve it over rice, there was a lot!) with leftover roast chicken breast and greens that I chopped up to braise- absolutely wonderful!

The ONLY problem is that it might be hard to re-create!
