Paleo Recipe Makeover- Pancakes??
I hadn't actually made psuedo pancakes like this myself, but I know someone who has- a fellow Paleo enthusiast, triathlete and some else who's also uber-creative in the Paleo Kitchen…Jeff in Indiana! Jeff and I have worked together in the past when he began incorporating The Paleo Diet into his training regime. He's completely Paleo now and is one of my gold-star clients as he comes up with idea after idea of fantastic meals, snacks and training fuel!! (You can save on cost of the almond flour by purchasing raw almonds in bulk and grinding them yourself in a $30 nut grinder by Cuisinart.)
I reached out to him for his insight and here's what he had to contribute:
1 apple, cooked, then blended to apple sauce
1 tbsp of almond butter
Dash of cinnamon
Splash of vanilla (optional)
Add 1/2 c Almond flour and 1/2 c egg white protein until desired thickness is achieved.
Cook on a hot griddle with coconut oil. Serve with raw walnuts, sliced bananas and espresso (espresso is not optional).
