Reinventing Leftover Chicken- Curry Salad

Wondering how to take your leftover chicken and make it into something more interesting than…leftover chicken?

Remove the skin & bones and chop up all the meat.  Add some salt-free curry powder and flax, coconut and/or olive oil and then your choice of:

diced apples

chopped red onion

slivered almonds

minced celery

raisins

chopped walnuts

grapes

fresh herbs such as thyme, basil or oregano

freshly ground black and/or white pepper

Serve it with leafy greens and you've got yourself a fast, healthy meal, much cleaner than a chicken curry salad you might find at the supermarket, which is often laden with goopy mayo and sugar!
