Paleo Egg Nog?

Yes! Here's an idea, again for the OCCASIONAL splurge:  substitute unsweetened almond milk for acidic dairy milk, or legume derived soy milk, and try a bit of honey for sweetness, in lieu of white table sugar. (As mentioned in The Paleo Diet, paleolithic man likely did come across the occasional bees nest and eat honey once in while.)

Nothing wrong with using the other ingredients in this version of an alcohol-free holiday drink.  Eggs (as long as you're not following an auto-immune plan), vanilla bean and cinnamon & nutmeg are 100% acceptable!

6 egg yolks
4 cups almond milk
1 cups honey
1 vanilla bean
Ground Cinnamon & Nutmeg

In a saucepan over low heat, blend the milk, cinnamon & vanilla bean.
Keep stirring while mixture heats, and remove from heat just before boiling point.
In a bowl, mix honey & egg yolks.
(Keep in mind that if you're a seasoned cook and used to the volume created w. sugar and egg, it's not going to happen with the dense honey!)
Slowly temper the mixture back into your pan over a medium heat while stirring constantly. DO NOT BOIL.
Keep stirring until your eggnog mixture starts to resemble custard.
Pour and strain the mixture into a ceramic or glass container & refrigerate.
Serve with a sprinkle of nutmeg and/or cinnamon atop each glass.
