Eat Your Spaghetti (Squash, that is!)

Why eat a plate full of wheat-filled (and thus, anti nutrient packed/lectin bearing!) pasta, when you can eat a serving of spaghetti squash in its proxy?

While I'm not claiming you'll fool yourself into thinking you're eating actual spaghetti, the similar shape and it's ability to hold a variety of sauces and toppings make it a fantastic replacement.

Cut in half, scrape out seeds and bake, cut side down, in a glass dish of water with an inch or two of water for about 40 minutes at 450, or until you can easily pierce the skin with a fork.

Remove from oven, cool a bit, and then, using a fork, scrape out the strands which will now resemble noodles!

Here are some of my favorite ways to serve:

-Tossed with fresh garlic, olive oil & pepper

-Mixed with sun dried tomato, basil & olive oil

-With a homemade marinara sauce

-As s bed upon which to serve your favorite meat, chicken or fish

-Combined with flax seeds and topped with sliced avocado and chicken

And on, and on… play around and let the audience know what you come up with!
