Dandelion Greens- Healthy, Tasty & Something New!

Practicing what I preach, I always LOVE trying new fruits & veg.  I must say that I honestly don't remember having eaten this lovely, bitter greens before.  I made such an easy dinner- easy is sometimes the most delectable, which was eyes-rolling-back-in-the-head delish!

Health benefits of eating this green include: strong antiviral properties, helps promote digestion and gastrointestinal health, encourages the growth of healthy bacteria, alleviates flatulence, supports gallbladder function, lowers bad cholesterol (LDL) and raise good cholesterol (HDL),support kidney function,liver detoxification, bloating associated with PMS.

Filet Mignon with Sauteed Dandelion Greens and Tomato

-Choose a clean cut of organic, grass fed beef.  Heat a cast iron skillet til very hot and throw the steak on for 4' each side, then remove from pan and tent with foil for 5'.

-Add a splash of olive oil to the same skillet and throw in some washed, chopped dandelion greens.  Cook for two- three minutes and plate the greens.

-Serve the steak on top, and garnish with some sliced, organic Beefsteak Tomato (the Vitamin C in the latter with quadruple your Iron Absorption!)- Voila!
