Paleo Chili?

Yes, I know, chili isn't chili without the beans….but let's be open minded here!   

Why not enjoy all the flavor of this dish with lots of potential, without the negative consequences of ingesting anti nutrient-packed legumes?

It's simply not a problem to concoct a recipe that's friendly to the #PaleoDiet.

Give this a whirl:

-Choose your protein(s)- beef, bison, chicken, turkey- you name it- or go with a combination!  Also, decide whether you want ground or cubed meat. 

-In a large stockpot with a bit of olive oil, brown your meat evenly, then remove from pan and set aside.

-Saute chopped yellow onion, green bell peppers and some fresh garlic in a the same pot with the same oil.   Add some fresh tomato, and keep it cooking over medium.  

-Add the meat back in and pour in some homemade broth (use whatever kind you may have left over- chicken, turkey, beef…).  How much to add depends on how thick and stewy or more soup-like you want the final product to be.

-Add your favorite spices.  Want some heat?  Add some cayenne or jalapeno!  Tartness?  Add lime.   Crisp?  Add cliantro.

Serve with a garnish of freshly chopped cabbage and some homemade salsa or guacamole.  Better yet, wait til the next day to serve it and it will be even tastier!
