Fiddlehead Ferns

This was a new one for me.  Whenever I see something interesting in the produce section at Whole Foods, I like taking the opportunity to expand the palate even more.

Fiddlehead ferns are really nutritious:

-Twice as strong as blueberries with regard to antioxidant activity.

-Packed with the nutrient omega-3 fatty acids.

-Source of dietary fibre & low in sodium (as ALL fresh veggies are!).

-Provide vitamins A, C, niacin, potassium, phosphorus, iron, and magnesium.

Keep in mind that Fiddlehead Ferns must be washed thoroughly and it's not recommended to eat them raw.  Try steaming them for 10 minutes, then throw them in the cast iron skillet with garlic and oil for a quick saute.
